i pronounce manicotti "mannicot" mozzarella "muzarell" (long u like "moo")
how do you correctly pronounce words in this way if it is right for coming from napoli.
Also, is campania pronounced how?

I’m studying Italian in college, and they teach us the northern pronunciations. I lived up at Aviano Air Base for a few years as well, so I’ll probably be talking northern Italian for the rest of my life, anyway.
This is how I’d say those words:
manicotti = mah-nee-KOH-tti
mozzarella = moh-tsa-REH-lla
campania = kam-PAH-nee-ah
Obviously, it’s a bit hard to relay what kinds of vowels I’m using. Yours will be different from mine, if you change "mozz" to "muzz."
However, Napoli should have about the same accent you do. I wouldn’t surprised if they thought "muzzarell" was just how you’d say it.
Not sure I answered your question completely, but I hope I helped.
